Spring is the perfect time to try out fresh, vibrant recipes that celebrate seasonal flavors. Here are some easy and delicious recipes for your spring feast:

  1. Strawberry & Spinach Salad Ingredients:

    • Fresh spinach

    • Strawberries, sliced

    • Feta cheese

    • Walnuts

    • Balsamic vinaigrette

    Instructions:

    1. Wash and dry the spinach leaves.

    2. Slice the strawberries and add them to the spinach.

    3. Crumble feta cheese and sprinkle walnuts over the salad.

    4. Drizzle with balsamic vinaigrette and toss lightly.

    5. Serve fresh and enjoy!

       

  2. Apricot Glazed Chicken Ingredients:

    • 2 chicken breasts

    • ½ cup apricot preserves

    • 1 tbsp garlic, minced

    • 1 tsp ginger, grated

    • 2 tbsp soy sauce

    Instructions:

    1. Preheat oven to 375°F (190°C).

    2. In a bowl, mix apricot preserves, garlic, ginger, and soy sauce.

    3. Coat the chicken breasts with the glaze and place them in a baking dish.

    4. Bake for 25-30 minutes until chicken is fully cooked.

    5. Serve with steamed vegetables or rice.

       

  3. Spring Pea & Mint Soup Ingredients:

    • 2 cups fresh peas

    • 3 cups vegetable broth

    • ½ cup fresh mint leaves

    • ½ cup cream (optional)

    • Salt and pepper to taste

    Instructions:

    1. In a pot, bring vegetable broth to a boil.

    2. Add fresh peas and cook for 5 minutes until tender.

    3. Blend the peas with mint leaves until smooth.

    4. Return the soup to the pot and stir in cream (if using).

    5. Season with salt and pepper, then serve warm.

       

  4. Spinach & Cheese Stuffed Mushrooms Ingredients:

    • 12 large mushrooms

    • 1 cup fresh spinach, chopped

    • ½ cup cream cheese

    • ¼ cup grated Parmesan cheese

    • 1 tbsp olive oil

    Instructions:

    1. Preheat oven to 375°F (190°C).

    2. Remove stems from mushrooms and chop them finely.

    3. Sauté chopped stems with spinach in olive oil until tender.

    4. Mix with cream cheese and Parmesan cheese.

    5. Stuff the mixture into mushroom caps and place on a baking sheet.

    6. Bake for 15-20 minutes until mushrooms are tender.

    7. Serve warm as an appetizer.
